As I write this recipe post, I'm perched on a fallen tree trunk by the creek in my backyard, scribbling on a notepad and watching my daughter catch bluegills and crawfish. Admittedly, it took some cajoling to get me out here -- it's 95 degrees, the middle of a workday and fishing is so not my thing -- but now that I'm listening to the water roll over the rocks and seeing my girl happy and peaceful in her element, I'm realizing that I'll miss these relaxed summer afternoons when school starts next week. So, in the spirit of hanging onto every last bit of summer, I'm sharing my favorite Southern peach cobbler recipe this week. It's an easy dessert made from sweet yellow peaches, warm spices and a homemade buttermilk biscuit topping, baked until the fruit is bubbling and the topping is golden. The recipe is a great way to use up all those summer peaches, as well as any other fruit you'd like to mix in. Be sure to serve it with a scoop of vanilla ice cream or dollop of sweetened whipped cream on top. |
